Grace Koshu Hishiyama Private Reserve 2021 is made from kōshū, an indigenous white grape variety with a rich history spanning a thousand years in Japan. Each bunch of grape is grown under the protection of a rain shade and is grown at high altitudes of over 500 metres in the Hishayama district of Katsunuma in Yamanashi Prefecture. The soil of this region is diverse and complex, containing granite formations that are dispersed throughout the area. The wine reflects the characteristics of the soil through its vibrant acidity and smoky minerality. The grapes are harvested by hand from specific vineyards, and are then fermented and matured in stainless steel tanks.
