Shichimi tōgarashi is a popular spice blend in Japan, containing seven ingredients, which create an umami-rich flavour with a spicy kick. Yatawaya Isogorō has been producing shichimi tōgarashi in Nagano Prefecture since the 18th century. The region, renowned for its washi production, used to attract many merchants, one of whom was the company’s founder, Kan'emon, who started selling the spice blend in the grounds of a local Buddhist temple, Zenkō-ji, in 1736.
