A special snow-aged sake with a refined character from Niigata Prefecture.
This exceptional sake is crafted using a unique maturation process with pristine spring water from the sacred Mt. Hakkai and carefully selected Yamada Nishiki rice. After brewing, the sake is covered in layers of snow and stored in a temperature-controlled cellar for 3 years. The snow acts as a natural insulator, providing a consistent, gentle cold environment for the sake to mature. This process allows the sake to undergo subtle changes and develop a refined character with complex flavours. Mellow, fruity aromas, with hints of honeydew and pear and a long, lingering finish is what is most striking in this sake.
Pairs well with seafood dishes, as well as grilled meats and vegetables.
Best served chilled.
The central Chūbu region is predominantly mountainous, home to the rugged Japan Alps with coasts on both the Sea of Japan and the Pacific Ocean. The region's history has been shaped by its strategic position between the great cities of Kyoto and Tokyo with Nagoya at its heart. Niigata lies to the north while Mt Fuji can be found in the south in Shizuoka Prefecture.
