This yōkan (a sweet confectionery with a smooth, gelled-paste consistency, typically made from azuki beans, sugar, and agar-agar) is produced with kokutō (unrefined dark brown sugar), which has a similar flavour profile to molasses.
The name Omokage means ‘vestige’ and refers to the lingering memory of a flavour popular in an earlier period in Japan. It appears in the Toraya archival documents, dating back to 1915.
