This onigiri mould is skillfully crafted from Tōnō hinoki (Japanese Cypress from Tōnō, Gifu Prefecture) in Nabari City, Mie Prefecture. The useful tool is used to form three evenly shaped onigiri at a time. Simply start with wiping the mould and base with a damp cloth to prevent rice sticking, then fill the moulds with rice. Next, place the filling in the middle and top with a layer of rice. Once each onigiri is compressed, it is easily removed from the mould as the Tōnō hinoki absorbs any excess moisture from the rice.
