A brush designed to remove ingredients from graters, manufactured in Tsubame-Sanjō, Niigata Prefecture, an area renowned for its metalworking techniques.
This stainless steel brush is designed for use with graters and mortars. It is used to collect grated ingredients, such as horseradish, cheese and sesame, and to remove fibres caught between the blades. Made from carefully finished metal wire, the brush is designed with attention to stiffness and edge treatment, helping to reduce friction between metal surfaces. Grated fibres can be removed by gently agitating the brush in water. The stainless steel is resistant to rust and wear.
