In this book, Gomi Yuki introduces an accessible approach to sushi, making the process approachable for beginners. It provides step-by-step instructions for preparing rolled sushi, as well as guidance on popular styles such as futomaki (giant roll) and temaki (hand-rolled sushi).
The book also covers the fundamentals of sushi rice and explains how to select and prepare fish including salmon, scallops, tuna, and mackerel. Beyond sushi, it includes recipes for soup and a variety of small dishes.
Gomi Yuki is a Japanese chef, food writer, and cookery teacher. This is her first book, published in 2013 by Penguin Books. After studying at Le Cordon Bleu in Chicago, she trained under a master noodle chef before moving to London in 2005, where she began teaching Japanese home cooking classes. Her work focuses on showing how simple, nourishing, and flavourful Japanese food can be.
