白味噌
Artisan brewed sweet white miso paste from Hyōgo Prefecture.
This white miso paste is fermented in Ashiya, Hyōgo Prefecture using long-established natural fermenting techniques and miso-making traditions that date back over 100 years. When preparing white miso, the ratio of malted rice is at least twice that of soybeans, thus obtaining high sweetness and a delicate pale yellow colour. Miso paste can be used not only for Japanese cuisine but also for various dishes such as soups and stews as a flavourful seasoning to add depth to your cooking.

The central Chūbu region is predominantly mountainous, home to the rugged Japan Alps with coasts on both the Sea of Japan and the Pacific Ocean.
