This yōkan (a sweet confectionery with a smooth, gelled-paste consistency, typically made from azuki beans, sugar, and agar-agar) is prepared with a mixture of smooth and whole azuki beans.
The name of Yoru no Ume (lit. ‘plum at night’) refers to the aesthetics of the sliced whole azuki beans in the yōkan, which resemble white plum blossoms glimmering in the night.
