Made using only the finest Yamada Nishiki rice, polished to an astonishing 23% of its original size, Dassai 23 is a sake of superior quality, purity and delicacy of flavour. Characterized by its fragrant floral aroma, and smooth mouthfeel, the Dassai 23 offers a well-balanced sweetness with notes of ripe fruits, gentle acidity and a lingering finish.
Pairs well with seafood, grilled meat and vegetables.

Junmai (lit. ‘pure rice’) indicates that no additional alcohol or additives were used in the brewing process.
Daiginjō is a premium category sake known for its high-quality, often fragrant aroma and refined flavour. To be classified as daiginjō the sake must meet specific requirements such as the polishing ratio of the rice being at least 50% (meaning that the rice is 50% of its original size). This process removes the impurities and undesirable flavours contained within the outer shell of the rice, leaving only the starchy inner core and allowing for a smoother and more delicate sake.
