A junmai ginjo ideal for pairing with light dishes, produced by Niizawa Sake Brewery in Miyagi Prefecture.
Hakurakusei Junmai Ginjo (a type of sake made with rice polished to 55%) is characterized by a subtle fruity aroma that carries through to a clean, well-defined finish. It pairs well with light dishes such as fish carpaccio, tofu, and vegetables. It is best served chilled to preserve its aromatic balance.
Niizawa Sake Brewery, established in 1873, is recognized for its careful approach to shipment and distribution management, aiming to maintain quality from production to consumption. The brewery received the Sake Brewer of the Year award in the SAKE category at the International Wine Challenge for four consecutive years up to 2025.

Tōhoku
Tōhoku consists of six prefectures located in the north-east of Honshu island. This region is known for its hot spring (onsen) resorts, colourful festivals, remote sacred mountains and harsh winters. In 2011, the devastating earthquake and tsunami hit the region hard; however, the massive efforts in reconstruction are proof of the people’s resilience. Urushi (lacquer) ware, ironware and the crafting of kokeshi dolls make up but a few of the local industries in this lesser-visited region of Japan.
