This bamboo oni sudare is a rolling mat specifically for the creation of datemaki (a sweet rolled omlette usually eaten on the New Year). The triangular segments of the oni sudare form angular edges on the rolled omlette giving the dish a distinctively spiked shape. The mat is skillfully crafted in Nabari City, Mie Prefecture using mōsō bamboo (a bamboo species with dense, hard fibres) sourced from Kyushu Prefecture. The design features refined details, such as the precise chamfering of the two corners at the base of the triangular segment. This attention to detail prevents friction between the segments, reducing the risk of the bamboo splitting.
