This tokubetsu honjōzō (a type of sake made with rice polished to 60% or less, or brewed using a special method and fortified with alcohol) is mellow, smooth, and dry. It is produced by Hakkaisan Brewery in Niigata Prefecture using Gohyakumangoku and Todorokiwase rice.
The region of Minamiuonuma in Niigata has a cool climate and high-quality water, allowing the sake to ferment slowly at low temperatures. The result is a versatile sake that pairs well with food and can be enjoyed chilled or at room temperature. It compliments richer dishes, such as tonkotsu ramen, beef bourguignon, and pork katsu sando.
