This junmai daiginjō sake was crafted with precision and care using the finest Yamada Nishiki rice, polished to a high degree to retain only its pure core. This sake holds an elegant balance of delicate aromas and rich flavours. The fragrance is enticing with notes of tropical fruits such as banana and pineapple. On the palate, it reveals a soft and smooth texture and a complex taste profile, combining layers of umami, subtle sweetness, and a hint of refreshing acidity. The finish is gentle and lingering, leaving a lasting impression.
It pairs well with creamy pasta and seafood dishes.

Junmai (lit. ‘pure rice’) indicates that no additional alcohol or additives were used in the brewing process.
Daiginjō is a premium category sake known for its high-quality, often fragrant aroma and refined flavour. To be classified as daiginjō the sake must meet specific requirements such as the polishing ratio of the rice being at least 50% (meaning that the rice is 50% of its original size). This process removes the impurities and undesirable flavours contained within the outer shell of the rice, leaving only the starchy inner core and allowing for a smoother and more delicate sake.

In 2011, the devastating earthquake and tsunami hit the region hard; however, the massive efforts in reconstruction are proof of the people’s resilience.
