A junmai ginjō (a sake made with rice polished to at least 60%) brewed with the crystal-clear meltwater from the mountains of Fukui Prefecture.
This junmai ginjō (a sake made with rice polished to at least 60%) has subtle notes of cherry and soft, sweet aromas reminiscent of vanilla and cotton candy. The name yuki (snow) is inspired by the purity of the crystal-clear meltwater used in brewing, as well as the clarity and transparency of the sake itself, which reveals a layered flavour profile.
The sake pairs well with dishes enhanced by citrus acidity, such as oysters with lemon or saury with sudachi (a round green citrus fruit native to Tokushima Prefecture).

The central Chūbu region is predominantly mountainous, home to the rugged Japan Alps with coasts on both the Sea of Japan and the Pacific Ocean. The region's history has been shaped by its strategic position between the great cities of Kyoto and Tokyo with Nagoya at its heart. Niigata lies to the north while Mt Fuji can be found in the south in Shizuoka Prefecture.
