Shōchū is a distilled spirit typically produced from barley, sweet potatoes, rice, buckwheat or brown sugar. This barley-based Kannoko Mugi Shōchū is from Kagoshima Prefecture and is brewed with white kōji, a mould-inoculated grain that produces a refreshing acidity during fermentation.
Aged in oak barrels for three years, the shōchū develops a warm amber hue and is made exclusively from natural ingredients, with no additives. The name Kannoko originates from a stream in southern Kagoshima and means ‘river protected by the gods’ in local dialect. Versatile and smooth, it can be enjoyed straight, on the rocks, or mixed with water or club soda.
