A refreshing shōchū created with yellow kōji (a fermentation starter with a lighter, less acidic profile than other types of kōji) and Koganesengan sweet potatoes grown by local farmers in Kagoshima Prefecture.
Shōchū is a distilled spirit typically produced from barley, sweet potatoes, rice, buckwheat or brown sugar. This Tomino Hōzan Imo Shōchū is made with yellow kōji (a mould-inoculated grain with a lighter, less acidic profile than other types of kōji) and Koganesengan sweet potatoes cultivated by local farmers in Kagoshima Prefecture.
The sweet potatoes are carefully selected, thoroughly cleaned and fermented at a low temperature, resulting in a refreshing, citrus-like aroma with a crisp texture and delicate sweetness. This shōchū is ideal served on the rocks or mixed with soda water to enjoy as a highball.
