In this book cooking teacher and food writer Sonoko Sakai gives a comprehensive guide to making authentic Japanese dishes in the comfort of your home. Divided into two sections Sonoko gives an introduction to the Japanese pantry, familiarizing the reader with ingredients essential and sometimes unique to Japanese cooking. She expounds in detail on the fundamental components of Japanese dishes and helps incorporate their flavours into simple, everyday dishes through proper seasoning and authentic cooking methods. Taking the recipes of the first part a step further, Sonoko builds them into a full expression of Japanese home cooking through more advanced dishes and the addition of sweets and beverages. The recipes in the book were all collected by Sonoko herself based on the ingredients available in her home in California, with some adapted and some created created by her through decades of experience in the kitchen.

Sonoko Sakai (b. 1955) is a cooking teacher, food writer, grain activist and advocate for the preservation of food traditions. An author of three books, her stories have been featured in prominent US newspapers and tabloids.
