This junmai daiginjō (a type of sake brewed from rice polished to 50% or less) is produced by the family-owned Tosa Brewery, which has operated in Kōchi Prefecture since 1877. Located in the mountainous region of Tosa Reihoku, the brewery benefits from fresh spring water and locally grown rice varieties. This sake is made using Gin no Yume rice, polished to 45%, resulting in a well-balanced profile that is approachable even for those new to sake.
Delicate floral notes of rose petals are complemented by tropical hints of lychee, starfruit and wild strawberry. On the palate, a citrus-like acidity and smooth, rounded texture are underscored by a subtle umami character. This versatile sake pairs well with dishes such as carpaccio, ceviche, and sushi.
