This nigori junmai daiginjō (a cloudy sake containing fine rice particles, brewed from rice polished to 50% or less) features a smooth, silky texture and bold fruity aromas of mango, pineapple, and lychee. With its creamy, mellow palate, it pairs particularly well with aromatic or spicy dishes.
Brewed using CEL-24, a highly aromatic yeast strain native to Kōchi Prefecture, this sake has a polishing ratio of 50%. It is produced by the family-run Tosa Brewery, which has operated in the mountainous region of Tosa Reihoku since 1877, where the brewery benefits from fresh spring water and locally grown rice varieties.
