This grater is made from copper and finished with tin by skilled metal craftspeople of Kōbō Aizawa in Tsubame City, Niigata Prefecture, a region renowned for its metalworking industry.

The teeth are sharp enough to shred your ingredients with minimal force and soften the texture of even the most fibrous of vegetables, such as ginger. To grate wasabi, the manufacturers recommend using a kneading action, avoiding squashing the root into the grater, to help develop a richer flavour in the grated product.
The grater is designed with a raised edge to prevent grated food from falling to the side. Available in two sizes, small and large.

The copper may develop a patina over time.
If the copper turns green, use an abraisive sponge to polish.
