The KI NO BI Kyoto Dry Gin is a gin created from Japanese botanicals by The Kyoto Distillery, an artisanal gin producer based in Kyoto Prefecture. KI NO BI translates to ‘Beauty of the Seasons’ and is created from six elements: base, tea, citrus, herbal, spice, and fruity and floral.
All elements are carefully selected from predominantly local and in-season ingredients such as yuzu from Ayabe, northwest of Kyoto Prefecture, gyokuro (a type of green tea grown in the shade) from the Uji Region, sanshō (Japanese pepper), akamatsu (Red Pine), lemon from Kisshoin and Juniper berry. Used alongside the regional botanicals, the rice spirit base and pure groundwater are sourced from Tsuki-no-Katsura, a sake brewery based in Fushimi, an area renowned for sake brewing with a reputable history dating back to 1675.
The well-balanced and distinctive aromas of KI NO BI Kyoto Dry Gin have been recognised by the IWSC and have been awarded the IWSC trophy for Contemporary Gin of the Year.
